
Chicken Fajita Tacos

Ingredients
2 kg boneless meat (chicken, fish, or red meat)
3 Tbsps Oil
2 Tsps Fajita Seasoning
2 Tbsps Lemon juice
Salt TT
1/2 Tsp red chili powder (if spicy is preferred)
Julienned Bell pepper, red pepper and onion
To serve
Flour tortilla
Salsa
Sour Cream
Lemon/lime wedges
Directions
- Begin by marinating the meat with oil, Fajita seasoning, lemon juice, and salt. Cover and let the flavors merry for 30 minutes to 1 hour.
- In a hot pan, fry the meat on medium to low heat until tender. Once cooked, remove the pan from the heat, and in the same pan juices sautee the vegetables. Season them with salt and pepper.
- Now assemble the tacos. Lightly toast the tortilla in a hot dry pan until warm. Place the vegetables, chicken, salsa, and sour cream on the tortilla. Garnish with fresh coriander, lemon juice and a generous sprinkling of the Fajita seasoning.
